How does a trust fund actually work - can I set one up without an attorney?

I want to create a trust fund for my children (ages 8 and 11). I don't want them to get the money all at once when they turn 18. I've heard I could set terms like getting money at 25, 30, 35. Can I create a simple trust myself online or do I need an attorney? Ballpark cost?
